The real Cookie Nomster: pistachio dark chocolate chip cookies!

Pistachios, dark chocolate, and brown butter….all in a cookie? YES, PLEASE!

Since I found this recipe by Ambitious Kitchen I have made these cookies 4 times! They are delicious and definitely a crowd pleaser.



Spend the extra money to buy quality ingredients and you will not be disappointed. I use Kerry Gold unsalted butter (can be found at Whole Foods) and Starbucks instant coffee (I bought the Italian roast flavor at Krogers). The brown butter, dark brown sugar, and coffee definitely make these cookies special.


  • How to brown butter: cut butter into chunks, place in pan over medium-high heat, stir as butter boils, complete once butter is a amber brown color and gives off a nutty aroma.


Another tip: slightly undercook the cookies so they stay soft! I use about 1.5-2 tablespoons of dough for each cookie (I make sure there are 3 chunks of chocolate in each cookie and a good amount of pistachios)  and bake them for about 8-9 minutes until the edges are slightly brown but the center is still gooey!
