Sriracha Slow Cooker Meatballs

The cold days are still here and that means one thing in my kitchen… the slow cooker is still going strong. With busy schedules, we’re always looking for #SlowCookerSolutions to make our life easier. Easy recipes with simple ingredients are the way to go, so we’re sharing this meatball recipe for those looking to do less work in the kitchen and more time enjoying their meals! These meatballs can be paired with rice for a perfect meal or even alone as bite-sized appetizers.

Ingredients you’ll need:

  • 1 lb Original Farm Rich Meatballs (Turkey would work great too!)
  • 1/2 cup beef stock
  • 1 cup hoisin sauce
  • 1 teaspoon fresh minced ginger
  • 1 green onion
  • 1-2 limes to taste
  • Sriracha sauce
  • corn starch (optional to thicken sauce)

We used Farm Rich‘s Original Meatballs (available at most Wal-Marts and Giant Eagles in central Columbus). These are gluten-free and perfect for serving those with celiac or gluten sensitivities. Place the meatballs, beef stock, hoisin, and ginger into a slow cooker – set on high for 3 hours.

Right before serving, drizzle some Sriracha sauce and fresh lime juice over the meatballs. Garnish with curly green onions (julienne cut + placed in cold ice bath) for a nice strong bite. And yes, that’s all there is to it!
